I use this stitch a lot, most of the amigurumi crochet patterns I have used it extensively. As indicated above single crochet in the US version is the same stitch as the double crochet in the UK version and it looks something like this:

Before you start you would need to form a slip knot and work the required number of chain stitches as the base for your Single Crochet (US) / Double Crochet (UK).
Step 1: insert the hook into the front loop on the next chain stitch.
Step 2: Wrap the yarn around your hook (at the back of the work).
Step 3: Pull the yarn through both loops on the hook.
Sometimes watching someone do it is easier to absorb than static images and written instructions.
